Easiest Pumpkin Brownies EVER

First off, if you’re one of those spouting off that it’s too early for fall things and ‘summer isn’t even over yet!’ — you need back up off this pumpkin spice Tim Burton sweater weather creative space. It is officially September which means I am fully allowed to go hog wild on all things fall—starting with pumpkin recipes.

I really want to be one of those Pinterest moms that have time to make special desserts and crafts and activities for their families while working and raising humans every single day without losing their shit mind(like Stephanie over at Simple Life with Steph, who is relatively new to blogging, but I know works full time from home, raises 3 smart, spunky, beautiful babies, and creates the most memorable birthday party, holiday, beginning of school year memories for her children)—but I am not that mom, as you know if you’ve been with me for any length of time 🙃 I like simple things that make me seem like I know what I’m doing, hence today’s blog-2 ingredient pumpkin brownies 🎃

I really used to love baking, and I’m not opposed to baking, but as I get older easier is more appealing dessert-wise (except frosting. I refuse to buy store bought frosting) so these are a fave for me, because they’re so delicious, moist, and flavorful, but no one knows how little it took to make them. You can taste the hint of pumpkin, but mostly they’re just fudgy, moist squares of utter deliciousness. I like to tell people it’s my mothers recipe, because she is the professional baker(legitimately professional) and the brownies are so delicious people believe it! If you need a dessert to bring to your next fall birthday party, work get together, family dinner, WHATEVER—keep reading.

  1. Gather your ingredients

  • Brownie mix (this one is 19.9 ounces)
  • Pumpkin mix (you’ll need 15 ounces for one box of brownie mix)
  • Bowl for mixing + spatula
  • OPTIONAL:for a real pumpkin pie flavor, add in 1/2-1 tsp pumpkin pie spice , or chocolate chips for more of a traditional brownie 👌

  1. Mix pumpkin and brownie mix together until smoooooooooth
  2. Search the house for disposable brownie pan you know you have so you don’t have to wash a pan
  3. Transfer to pan, bake @350F for 15 minutes (oven times may vary-keep checking in the oven for your preferred doneness)

  4. Take a selfie because you totally just made delicious brownies
CONGRATS! You now have a last minute kid didn’t tell me I needed to make something but I need to make something and I don’t know what to make brownie recipe that every one will want to know! But you can just tell them it’s a secret family recipe-I won’t tell anyone.

P.S. wishing I had a smaller pan or doubled the batch for really thick brownies, but hey--these are just for me anyway!

P.S.S. I also use this method with spice cake mix + pumpkin pie mix for a pumpkin spice cake EVERYONE raves about. Extra points if you frost with 3 ingredient frosting 😉
